Roast Broccoli, Avo & Tahini Dressing

This innovative and interesting vegetarian dressing is anything but boring. If you’re looking for something a bit different that involves using a combination of bold flavours, then this is definitely the vegetarian option for you. Use the dressing on salads or use it to spice up a main or side dish.



Ingredients

  • 1 head broccoli, cut into small florets
  • 2 tbsp Sunfoil Oil
  • 1/4 tsp salt
  • 1/3 cup Tahini
  • 1/3 cup water
  • 1/2 cup jalapeno, fresh
  • 1 clove garlic, chopped
  • 1/4 cup Sunfoil Oil
  • juice of 1/2 1 lemon
  • 2 tbsp basil, chopped
  • 2 small spinach leaves, chopped
  • 6 mint leaves, chopped
  • 1/4 tsp salt
  • pinch of black pepper
  • 1/4 red chilli, de-pipped and chopped
  • 2 cups mixed greens
  • 1 avocado, sliced
  • 2/3 cup black beans
  • 1/4 red onion
  • 3 tbsp pumpkin seeds, toasted

Method

1. Preheat the oven to 200°C.
2. For the Broccoli: Toss the broccoli, oil and salt in a bowl then place onto a baking tray and
roast for 20 minutes.
3. For the sauce: Blend all of the ingredients together until smooth. Taste and season
accordingly.
4. Making the salad: Place the mixed green on the platter, layer with the avocado, beans,
red onion and drizzle over 1/3-1/2 the sauce. Sprinkle over the pumpkin seeds.
