Fresh Thai Paste

Thai cooking has inspired many favourite dishes and has a distinct, delicious flavour as a result of the combination of the herbs and spices used in the recipes.

Everything tastes better when it’s freshly made, so combine these easily sourced ingredients that are commonly found at most supermarkets or farmer’s markets and you will have the best tasting Thai dishes to serve up to your friends and family.

The paste works well for both meat and vegetarian dishes and can also be used as a marinade.

Ingredients

  • Fresh red and green chillies
  • Lemongrass, crushed
  • Fresh ginger
  • Garlic
  • Milled black pepper
  • Fresh Coriander
  • Mint

Method

  1. Make a Thai-inspired paste using fresh red and green chillies, crushed lemongrass, fresh ginger, garlic, milled black pepper, fresh coriander and mint.
  2. Blitz the ingredients, varying quantities according to preference and taste, in a food processor or in a mortar and pestle and add Sunfoil oil to make a paste. Use the paste as a base for stir-frys and dressings. Alternatively, add more Sunfoil Sunflower Oil and use as a marinade for chicken of fish.
